Hong Kong’s , is an eccentric display of dried fish : some sold loose, some hanging in a queue and some nicely packed! ,  dried fish means much to people in Hong Kong and to what extent it is a part of the local Chinese cuisine! I was astonished by the stupefying variety of dried fishes there, fishes of every shape and size, and truly spectacular in their own right!


Old Chinese belief about dried fish.The Chinese believe that eating certain foods on auspicious days, such as the Chinese New Year, would bring luck to them. Dried fishes are one of them. The dried oysters and mussels are considered to bring fortune if they are eaten during the Chinese New Year celebrations. The Chinese New Year boosts up the sales manifolds in all the shops selling these products. The heavily crowded street, with loads of different kinds of dry fishes on display on either side, is worth watching during this time of the year! During this time, there is a tradition here to gift dry fishes since these bring in good omen and a spread of delicacies is made using these!.

  Before celebrating the Chinese New Year, Fish Maw flood the Chinese market. It is considered as one of the best gifts for friends and family as it is quite expensive and is not a common item on the table during normal days due to its scarcity. Many Chinese families present it only at important parties. 
  The fish maw dried is expensive if it is of good quality, but what is sold in the supermarket has an average price and, therefore, the price is much lower. Unethical business use seafood such as squid, shark's skin or head portion of fin soaked in hydrogen peroxide and sulphur followed by heat process to produce the imitations.  Also, it is common for substandard product to be disguised as top grade product. Unethical business collect substandard, low value and broken fish maw and pour them into a special mold, gradually increase the thickness of the layers and add pressure. The finished product will get similar thickness of real fish maw. There have been cases of using pig’s skin and chemical plastic to imitate fish maw although uncommon.
Look out for the following when making fish maw purchase:
- Colour :  Real fish maw has golden yellow colour whereas fake fish maw has light and whitish yellow unnatural colour.
- Grain :  Real fish maw has natural grain whereas fake fish maw does not have obvious and orderly grain. 
- Smell :  Real fish maw has light sea water smell whereas fake fish maw has none and may carry chemical or plastic smell.

It is therefore strongly advised to buy fish maw from reputable shops.
